”Relish the Zucchini Boat!’, Yes, as it is mentioned in the title we relished the Zucchinis, using the relish recipe below. I loved harvesting my next vegetable in this series. One of the reasons is that the Zucchini vegetable plant yields many vegetables in one single plant. Very much valued plant for the gardening effort. With Kohlrabi or Radish, each seed produces only one vegetable. But in Zucchini, you can harvest many vegetables from one single plant that is germinated from a single seed. I have planted both green and yellow variety and the green ones still need some more time until they are ready.

If the greens one and Yellow ones could have been ready at the same time and harvested at once, I had a recipe planned for them. Since I had to harvest the yellow first, I thought of this fusion recipe.

Relish the Zucchini Boat!

Relish is a condiment that is had along with the main food. Tomato relish has beautiful umami, acidic and sweet taste that compliments your main food. As plain Zucchini is bland, to make it interesting and to add a punch I included tomato relish as the stuffing. I also added Zucchini flesh to the relish while cooking. I added a few spice powders and made an Indianized version of relish fusion.

Zucchini has a juicy flesh, and our Stuffing is fine too..we need some extra fat to balance the whole dish. I added mini cheese balls and also added mild chilli and coriander leaves to give a wholesome feel to the dish.

Needless to say, fresh veggie along with a bed of relish, was just perfect for a vegetarian evening meal.

Stuffed Tomato Zucchini Relish!

Ingredients

  • Zucchini – 3 numbers medium size
  • Tomato – 6 numbers medium size roughly chopped
  • Vegetable oil – 1 TBS
  • Onion – 1 medium finely chopped
  • Chilli powder – 1 tsp
  • Corriander powder – 1 tsp
  • Cumin Powder – 1/2 tsp
  • Garlic powder – 1tsp
  • Salt as per taste
  • White vinegar – 2 TBS
  • Sugar – 2 TBS
  • Corriander leaves for garnishing
  • Gouda cheese – 100gms

Method:

  1. Wash Zucchini and cut them vertically. Scoop of the flesh and save it in a bowl.
  2. Heat a pan and add oil. Add onion and saute until it becomes translucent for 2 mins.
  3. Add chopped tomatoes and mix it well. Cover the lid and cook until the tomatoes are mashy for 5 min.
  4. Add chili powder, Garlic powder, Cumin powder, Coriander powder, and mix them.
  5. After a minute, add the scooped flesh of Zucchini and salt and mix together. Allow it to cook for another 5 min.
  6. There might be some water content from Zucchini flesh. Now cook without lid and until all the water evaporated and the relish comes to a thick sauce. Tomato Zucchini relish Relish is done.
  7. In a pot add water and boil. Add the Zucchini in hot water and blanch them for a minute.
  8. Remove and place them on a baking tray. Sprinkle little olive oil, salt, and pepper.
  9. Stuff the relish in Zucchini boats. Make small balls of cheese and place it on top of the relish.
  10. Add chili and coriander leaves on top.
  11. Preheat the oven at 180C. Bake them for 15 min at 200C. After that place them near the top grill and bake them for 5 minutes to give that browning for the cheese.

Serve it warm and enjoy as starter or Enjoy it with slices of Bread for your dinner.
