Video blog launch / Navratan Korma

I got another opportunity at the office to showcase Indian food. This is my first recorded cooking session made for a blog post in my office. I have chosen some recipes to present Indian cuisine and Navratan Korma is the one of top recipes that came to my mind. For the side, I have chosen a dish that is closer to me from my childhood days. I have grown up near the seaside and we used to get lot of fresh fishes from sea. This is the recipe we mostly repeat making and also fisherman families from south coastal regions would make this dish often in India.

For the Dessert, I have chosen Mango Shrikhand which originated from western India. India has its Mango season now, and it was the right time to show this one. Its a no-cook recipe and can be made very quickly.

The virtual live cooking session for my office colleagues from last month was an experience to me. During the session, I wanted to be myself and simply delivered my style of cooking and shared my cooking knowledge what I felt at that moment to the audience. But with recording a video, there is always a second chance to go for retake:-) but it also has pros and con’s. If you ask which one you liked, I liked the live session more:-) and I should get used to recording sessions!( mainly the video making and editing is totally new to me)

The main course Navratan Korma, is from Mughlai cuisine which originated from North India and it is known for its richness of ingredients used in food preparation. Butter, Cream, Ghee, Dry fruits and Nuts are very typical for this cuisine. If you are dieting right now and don’t panic by reading the richness it offers, it also has got healthy veggies and dry nuts and fruits. Common on..this is food for Royals on those days. Let’s be Royal once in a while and enjoy this rich dishes.:-)

Navratan Korma with Rice

Ingredients:

9 Key Ingredients for Navratan Korma(this list is my personal choice for this time of cooking this recipe. I would like to moderate these ingredients every time to have a change:-) )

  • Carrots cubes steamed   -1 cup
  • Frozen Peas – 1 cup
  • Cauliflower florets steamed – 1 cup
  • Capsicum – 1 cup
  • Paneer cubed – 1 cup( Indian cottage cheese)
  • Cashew nuts -10
  • Pecan nuts -10
  • Almond -10
  • Dry grapes – 2 tablespoon 

Base Sauce

  • Onion diced  -2 
  • Green chilli -2
  • Cashew nut -15

Ginger garlic paste 

  • Garlic pods -5
  • Ginger – 1 piece

Other Ingredients 

  • Ghee – 2 tablespoon
  • Coriander powder -1 tsp
  • Garam masala – 1 tsp
  • Fresh cream – 100gm
  • Salt to taste
  • Coriander chopped – 2 tablespoon 
  • Pomegranate kernels – 1 tablespoon 

Preprepare:

  1. Prepare your veggies, Paneer and dry nuts/fruits – Take some of your favorite veggies and cut in to cubes. Some veggies like carrot and cauliflower need to be half cooked. Capsicum and frozen peas does not need a precook. Take some of your favorite dry fruits and nuts and keep them ready. Cut Paneer in to small cubes.
  2. Prepare Ginger/Garlic paste: Add pealed ginger and garlic in a blender and add some water and grind to fine paste.
  3. Other Ingredients: Keep all the other ingredients from the list above ready to use.
  4. Base sauce: Add Onions, green chilli, cashew nuts and little water and cook this together for 10 min and until onions are soft. Cool the mixture to room temperature and grind to fine paste in a mixture.

Preparation:

  1. Heat a pan and add Ghee. Add Ginger and Garlic paste and cook in a slow heat for few seconds. Now add ground base sauce mixture and saute them for couple of minutes.
  2. Add Coriander and Garam masala powder and mix it. Cover and cook in medium for 3-4 minutes.
  3. Now Add all your veggies, paneer, dry fruits and nuts. Add salt and some water to dilute the sauce. Mix them all and cook for another 3-4 min and until there is a good boil of the sauce.
  4. Add fresh cream, mix and cover the lid and wait for another boil. Add fresh coriander leaves mix it and done.
  5. Serve it by adding some cream, coriander leaves and pomegranate kernels on top.

Tip: You can also add some sweet fruits like fresh pineapple, dried Apricot. Be creative in adding your own choice of vegetables and dry fruits and nuts. You can enjoy Navratan Korma with Indian breads and Rice.
