Garden To Table Series(Ep:6)- Spinach Harvest & SweetCorn Palak

It is lovely to see the freshness of these greens growing every day in my balcony. Not only that it looks great, it tasted equally great 🙂

Like most of the kids, I was not easy with eating Spinach. I don’t understand why many kids don’t like to eat Spinach. If my mother asked me to eat spinach which is served on my plate( not to waste food ) I would literally swallow them with water. Just like taking tablets. I hated Spinach in my platter and refused to have them. But my mother was clever and she knows the trick. She got me involved along with her into growing Spinach, We sow the seeds together in our little garden and harvested Spinach which created a positive feeling within me for Spinach. Then She also cooked tasty dishes with Spinach that I would ask for a second serving. (this spinach recipe is one of them ). While she cooks, I silently observe what ingredients go in and how its made. Bottomline involving your kids in gardening and also while preparing your food is good idea :-).

In this post, I am sharing another recipe of spinach using my own harvest. Sweet corn palak, as it goes by its name, two main ingredients. the first one you know, the later one Palak is a Hindi word and it means Spinach. This recipe is a variation of Palak paneer where the difference is mostly with the second main ingredient. ( Paneer or sweet corn). You can also add Palak, paneer, Sweet corn in one dish.

Sweet Corn Palak

Here is the Recipe for Sweet corn Spinach/Palak.

Ingredients:

  • Spinach – 400 – 500gms
  • Oil – 2tbsp
  • Onion – 1
  • Ginger&Garlic paste – 2 tsp
  • Tomato -1
  • Garam Masala – 1tsp
  • Coriander powder – 1tsp
  • Chilli powder – 1tsp
  • Turmeric powder – 1/4 tsp
  • Salt – as per taste.
  • Sweet corns – 150gms
  • Fresh cream – 50ml

Method:

  1. Blanch Spinach : Boil water in a pot and blanch the Spinach for a minute and remove them.
  2. Cool the Spinach and grind it to a puree.
  3. Heat a pan and add oil.
  4. Once the oil is hot, add onion and saut’e them. Add Ginger and Garlic paste and saut’e for couple of minutes.
  5. Add the spices: Chili, Coriander, turmeric, garam masala and mix them for few seconds.
  6. Add tomatoes and cook them until it soft. Cover it with lid.
  7. Add the Spinach Puree, salt and cook for 5 more minutes.
  8. Add sweet corn and Fresh cream and cook for a minute.
  9. Now it’s ready to be served with Roti or Rice. Top it with some sweet corns and fresh cream.
