Garden To Table Series(Ep:2) – Butter Head Lettuce and secret dressing!

Another green in this series. Greens give quick harvest and sometimes it is overwhelming to see different greens ready at the same time to be picked up. The beauty is I would prefer them to wait in the balcony for a few days in the plant, rather than harvested sitting in my fridge. Keep your harvest bags ready, If you have some pots of greens growing in parallel:-).

Butterhead Salad/Kopf Salat


Kopfsalat/Butterhead Lettuce have a mild, tender, and buttery texture. The good thing about this variety is once they are ready, you can harvest from the same plant 4-5 times giving a break of every 2 weeks. I pick the outer leaves for my salad and leave few leaves from the centre bulb to mature for the next harvest.

The shop-bought ones are sold as one whole head and the outer leaves are mature dark green and sometimes with bitterness. The inner leaves are mild. In my balcony, with I have 4 plants, the outer leaves harvested are always tender and often enough to have salad for one complete meal for 3 of us. This is 2nd harvest from last week and I will do another harvest next week.

As much it is fresh and looks gorgeous, I decided to prepare a beautiful sauce to top up more beauty to the salad. Ever time when I make this preparation, I call them Rossel salad. Rossel is the restaurant where we tasted this salad dressing first time and it made me order the second plate of Salad on that day. Since then we make this dressing often. Lamb’s Lettuce salad also goes very well with this sauce. So what’s the secret sauce? We checked with the person serving us about the ingredients and he shared the main Ingredients with us. So now, though the ingredients are known, it is not easy to achieve the same taste, the quality of ingredients chosen matters. I took Vinegar that is very mild and Sour cream which is creamy and mild sourness, more like fresh yogurt with creaminess.

I did a few tries and got the same taste of dressing. For the presentation, I like to present the salad in different ways and this is one of them from my gallery 🙂

Here are the Ingredients and recipe..

Ingredients:

  • Fresh Butter head salad leaves
  • Sour cream – 200ml
  • Mild vinegar – 1 Tablespoon
  • Water – 2 Tablespoon
  • Salt as per taste
  • Pepper as per taste
  • Sugar – 1Tablespoon
  • spring onion – 3( finely chopped)
  • Cherry tomato – few

Method:

  1. Wash the salad leaves with salt and vinegar in a bowl of water. Let it sit for 10 min.
  2. Remove the leaves and remove any extra water.
  3. Cut them in to small pieces. I used bamboo stick to arrange them.
  4. Prepare the sauce: Mix all the ingredients except the leaves in the list and whisk them. Add your salad and mix with sauce just before serving.
