(Tortilla De Patatas – Spanish Omelette ) & Park Guell

After my Spain Vacation, I was keen to learn about their Cuisine. Suprisingly this spanish Omelette is the one, I used to make very often for my child as a complete meal.  I did n’t invent this dish, I came to know it long back from my friend Sharada. She is good in Malabar Recipes.

It was interesting to know that Spanish use olive oil in almost all the dishes. Garlic is one more ingredient they love to add in to the recipe.

I prepared this Spanish Omelette with a little variation from the original one. In the Original, they add the Olive oil, raw sliced potatoes and saute it with onions then followed by beaten egg. They use more oil to let the potatoes cook in that. But I use little oil of any type, boiled & smashed potatoes and corriander leaves as a variation.

Ingredients:

  1. Olive oil – 1 Tbs
  2. Onion – 2 , finely chopped
  3. Egg – 4 , beaten
  4. Potatoes – 2 , medium sized, boiled and smashed
  5. Salt for taste
  6. Corriander leaves – 1/4 cup, finely chopped
  7. Pepper – 1/2 tsp

Method :

1. Add the oil to the small pan and add onions. Saute it till it becomes slight brown in color.

2. Add the smashed potatoes, coriander leaves and salt to the beaten egg and pour it into the sauted onions. It should be atleast 1/2 inch thickness or little more.

3. Lower the heat and let it cook for 5 minutes and with the help of the other pan just flip it over and cook on the other side for 2 min, because we dont want to break it by doing the usual way.

4. Serve it warm. Good to have as a breakfast and also as a side dish.

Let’s look at this Spain attraction Today…..Park Güell

Yesterday in my post I have wrote a little about the Spanish Architect Antoni Gaudi. This is one of his Garden city project, initiated by Güell and designed by Gaudi. It was a city planning project aimed at building houses for the spanish people. It was developed by them in a 35 acre  hilly area very close to  barcelona. Surrounded  by trees and a unique architectural buildings with colorful marble pieces in his creations can inspire anyone. You can also visit Gaudi and Güell’s house inside this park and it is two among the 3 houses they built .This project was a failure  financially, but it was taken over by the city and converted in to open park. One can have a glorious view of the city from here enjoying the nature around them.

Prawns Masala Fry

Ingredients:

  1. Tiger Prawns – 500 gms
  2. Oil –  2 Tsp
  3. Onion – 2 large finely chopped
  4. Tomato – 1 finely chopped
  5. Cinnamon stick – 1
  6. Cardamom – 2
  7. Bay leaves – 1
  8. Cloves – 5
  9. Ginger – 1 Tsp, finely chopped
  10. Garlic – 1 Tsp, finely chopped
  11. Chilli Powder – 1 Tsp
  12. Coriander powder – 1 1/2 Tsp
  13. Turmeric – 1/4 tsp
  14. Coriander leaves – 1/4 Cup for garnishing
  15. Salt as per taste.

Method:

1. Heat oil in a pan and add Cinnamon, Cardamom, Cloves, Bay leaves and stir for a minute.

2. Add the ginger and garlic followed by onions. Fry till onions are translucent.

3. Add the tomatoes and cook for 3 – 5 minutes until the tomatoes are cooked.

4. Add the Spice powder Chilli, coriander, Tumeric and Salt. Add 1/4 cup of water cover the lid and allow it cook for 15 minutes.

5. By this time the base is well cooked . Now add prawns and cook for not more than 5 minutes.

6. Complete the dish with coriander and serve it as a side dish with Rice.

 

Grilled Fish (Tomato, Basil leaves, Oregano and Peppercorns)

Ingredients:

  1. Salmon fish – 1 whole fish (Skinned and cleaned)
  2. Tomato paste – 1 tsp Concentrated
  3. Basil leaves –  1 Tsp dried
  4. Oregano – 1Tsp
  5. Peppercorns – 1Tsp Crushed
  6. Oil – 2 Tsp
  7. Salt for taste.

Method:

1. Marinate the whole fish with mix of Tomato paste , oregano , basil ,salt and crushed peppercorns. Let it be in fridge for 1 hour.

2. Preheat the oven to 200 degrees. Grill the fish for 20 minutes in the medium rack.  Brush oil on Fish.

3. When it is done, cut in to slices and transfer to a plate. Serve it with lemon.

 

Easy Boiled Egg Fry

Ingredients:

  1. Oil – 1 Tsp
  2. Mustard – 1/2 Tsp
  3. Chilli powder – 1/2 Tsp
  4. Turmeric – 1/4 Tsp
  5. Corriander – 1/2 Tsp
  6. Curry Leaves – 1 strand
  7. Salt for taste
  8. Egg – 2 nos boiled and slightly slit as in picture

Method:

1. Add the oil to a hot pan. Add Mustard seeds and let it crackle.

2. Add chilli powder , Corriander , turmeric powder and salt.  Stir it for 2 minutes.

3. Pour 2 Tsp of water and it cook for 2 minutes. Now add the boiled egg.

4. Stir it for 3 more minutes. It can be served as side dish with Rice.

 

Easy & tasty Fish Fry

Ingredients:

  1. oil – 2 Tsp
  2. Salmon Fish – 250 gms cut in to pieces ( You can use all kinds of fish)
  3. Chilli powder – 1 Tsp
  4. Turmeric – 1/4 Tsp
  5. salt for taste
  6. Curry leaves – 1 Strand ( cut in to small pieces)

Method:

1. Wash the fish and add all the ingredients to it and mix well.

2. Let the marination sit for 1 hour.

3. In the hot flat pan add the 1 spoon of oil and add the fish.  Shallow fry the fish on all the sides for approx 5 – 7 minutes.

4. Add one more spoon of oil on top of the fish if needed when frying.

Tip: Delicious Fish fry can be served as a starter or an side dish with Rice.
