Butter Jam Cookies (Mothers Day Special)

Wishing All of you a Happy Mother’s Day!!!!!

I was really happy to get the above surprise present and song from my daughter this morning. Though I knew that she had something hiding in her room on Friday evening after her school, to surprise me on Mother’s Day. I pretended that I don’t know anything about what she is doing. She made a Heartin Bag full of puzzles, which says I LOVE LIEBE (dear) Â MAMA and greeting card in the school with the help of her teacher. I too wanted to surprise her and made some cookies, which she liked very much. Well!! I called my mom and wished her too.

Ingredients:

  1. All-purpose flour – 2 cups
  2. Butter- 100 gm, in-room temperature
  3. Sugar – 50 gms
  4. Salt a pinch
  5. Rock Sugar – 1/4 cup for decoration
  6. Jam – 1/4 Cup for decoration
  7. Coconut – 2 Tsp , desicated

Method:

1. Mix all-purpose flour, butter, sugar, and salt. Sprinkle a few drops of water and make a tight dough. Leave it for 15 minutes to rest.

2. Knead the dough and roll it with a rolling pin. Using a cookie cutter of similar shapes a big one and small to cut the rolled out dough into shapes.

3. Arrange the shapes one on top of another as in the following picture, so as to make it shallow in the middle to fill jam and sprinkle a little desiccated coconut. On the edges sprinkle some Rock sugar.

4. Preheat the oven to 200 c and bake it for 5 – 7 minutes. After it is done replace the cookies in serving plate and add little more jam and coconut on top to give a fresh look.
