Carrot Ginger Soup

- Olive oil – 1 Tsp
- Onion – 1/2, roughly chopped
- Ginger – 1cm cube, finely chopped
- Carrot – 2 medium-sized, roughly chopped
- Fresh cream – 1 Tsp (Optional)
- Salt for taste
Method:
1. Add oil in a cooking vessel. Â Saute the onions & ginger for 2 minutes.
2. Add Carrot and saute for 2 minutes.
3. Add 1 cup of water and cover it cook till the carrots are soft.
4. Puree this in a mixer to a fine thick consistency and transfer it to the soup bowl.
5. Add a dash of cream to the soup.
Tip: Carrot soup as itself was good without cream. It can be also garnished with coriander leaves.

Carrot n ginger soup looks rich and creamy,,good for health sure,,Sridhar will like this soup am gonna make this soup soon for him..
the dollop of cream makes it much more inviting.
