Mango Shrikhand
As part of my first recording cooking session for a Video blog post in office, I also made Mango Shrikhand. This is to present one combination of complete Indian meal to the viewers. If someone is new to cooking or new to a cuisine, the tendency is to try out a simple recipe. This post is about one such simple dessert that was part of the whole menu and can be whipped up in minutes.
Shrikhand is a traditional Indian dessert originating from the western part of India. The main ingredient is hung yogurt(curd cheese). The whey of the Yogurt is removed and only the thick strained yogurt is used in this recipe. Cardamom is the flavor component that is usually added. With yogurt and cardamom and Just by adding few spoons of powdered sugar simple Shrikhand is ready is serve. Chopped nuts can be added to give crunchiness to this dessert. As today’s recipe is about the Mango version of Shrikhand, Mango pulp is added as a second main ingredient. (choosing a good quality of Mango or Mango pulp decides your end result and taste of this dessert).

Ingredients
- Hung Yogurt or curd cheese – 1 cup( alternative Greek Yogurt)
- Mango pulp – 1/2 cup
- Powdered Sugar – 2 tablespoon
- Cardamom powder -1/4 tsp
- Dry nuts chopped – Almond and Pistachio ( 1 tablespoon each)
- Saffron and some Mango pieces for garnishing
Method
- Prepare your yogurt: If you are using Greek yogurt, you can skip to the next step. Using a plain yogurt, you have to drain the excess liquid by adding yogurt on cheesecloth which is placed on a sieve. Let it rest for couple of hours. Discard the water collected and use only yogurt cheese from cheesecloth.
- Add sugar and whisk it until the sugar is mixed.
- Add Mango pulp, cardamom powder, and whisk gently to mix them all together.
- Add dry fruits and mix.
- You can serve it chill in a dessert bowl and add saffron, dry fruits, Mango pieces for garnishing.
