Carnival season and Pancakes !!! Every festival has food associated with it and its true. Pancakes (Berliner)are considered as special food here during this season. Well!! Although every cuisine has its varied ingredients, method of cooking, flavors, the taste of people differs. Just like Bread, Pancakes are one of the common food in other cuisines. Indian pancakes to name a few Dosa, Appam, Adai, Besan cheela. French crepes are very popular thin pancake goes very well with liquid chocolate topping. Pancakes are one of the food that can be easily prepared in very little time. I remember my mother whenever she is puzzled about what’s to make for dinner. She picks out any one kind of flour(all-purpose flour, wheat flour, rice flour, cornmeal, gram flour, Raggi flour…..) add seasonings and make a pancake out of it. She also  prepares a chutney or dip to go with it. Mostly the pancakes were salt version and sometimes it was sweet version too.
While most of the pancakes are flat, thin, and made in the griddle, some of them are baked, some of them steamed and fried in oil, and may differ in shapes. This kuzhi paniyaram shape makes it so special and attractive than the normal ones. Quite surprisingly the dutch pancakes called poffertjes also have this shape, because they are made in the same kind of griddle. The ingredients slightly differ between each other.
