LebKuchen – German Ginger Bread

Lebkuchen, is one of the very famous Christmas treat here in Germany. The word Kuchen means Cake.
To prepare this,First i made it as a dough for the bread, then rolled it in a cookie sheet and used cookie cutter for the heart shape and later i baked it. Finally, Riya and i enjoyed decorating together with colors of Royal icing.
Lebkuchen can be compared to Gingerbread, but the spices vary between them. Usually made it into heart shape and decorated with icing.
Last time when i made, i used the substitute for Allspice (Nutmeg, cloves &  Cinnamon). Never worked with this spice before but definitely liked the aroma.The aroma of this Lebkuchen spice blend is very intense and gives a Christmasy feeling….Lebkuchen has got a unique taste unlike other cakes.
Ingredients:
Lebkuchen Spice:
1.Cinnamon – 2 inch stick
2.Cloves – 10nos
3.Corriander seeds – 1tsp
4.Allspice – 1tsp
5.dried ginger- 1/2 inch
6.Cardamom – 2nos
7.Nutmeg – 1/4 of one nut
8.Mace- 1no
Lebkuchen dough:
1.All purpose flour-600gms
2.egg- 1
3.Butter -150gms
4.Lebkuchen spice mix – 2Tbsp
5.Brown sugar – 100gms
6.Honey – 100ml
7.finely Chopped candied oraange-50gms
7.Extra flour for dusting
Royal icing:
1. one Egg white
2. Powdered sugar-180gms
Whisk 1& 2 to get a beautiful snow white icing. Add colors as needed.
Method to prepare Lebkuchen:
1. For the Lebkuchen spice add all the spice ingredients in a spice grinder
with a tablespoon of sugar and blend it to fine powder..
2. Now for the dough, add the flour in a bowl followed by butter, spice
powder,egg,sugar,honey, candied orange and mix it in to a dough.
3. Leave the dough covered for 1/2 an hour.
4. Now roll the dough and using cookie cutter cut it into desired shapes.
5. Bake it at 160C for 10-12 min in a preheated oven.
6. Once the cookies are cooled apply the Royal icing and leave it to dry for
couple of hours. Enjoy the festive cookie…

Sugar coated Butter Biscuits

Well!! Christmas season is on…Everyone celebrating Christmas party at office, schools and private get togethers. Its also time to keep baking trays, muffin forms, cookie sheets ready for the occassion.

Riya and I enjoyed this baking session together and  have plans for the next baking session already.

Keep looking :) … It was quite sometime since I blogged or caught up with my blogger friends. Hope to catchup with that during this vacation season…

Ingredients:

  1. All purpose flour –  4 cups
  2. Butter – 200 gms, at room temperature.
  3. Sugar – 1 cup
  4. Cardamom – 1/4 tsp Powdered.

Icing:

  1. Icing sugar – 100gms
  2. Food Color – desired color.
  3. Few drops of water.

Method:

1. Add the Butter and sugar in a bowl and mix it very well with spoon.

2. Add the remaining ingredients and knead it into dough.

3.Leave it aside for about 1/2 an hour and later roll it using rolling pin.

4. Using cookie cutter, make desired shapes and bake it preheated oven at 160C for 15 to 20 mins.

5. The next batches will take approx 10 mins. Allow the biscuits to cool thoroughly.

6. Mix icing sugar with few drops of water and color in to a sugar paste. Apply on the biscuits.( I also used some sugar sprinkles and ready made sugar tubes for outlines.)

50 Little Ghosts dressed up in Pink’s & Blue’s – Halloween Special

Coconut Macroon’s.

I was Surprised !! Everything was so quick on that day(Last Friday). Getting up from bed, Breakfast, & getting ready to Kindergarten. All was because of a Magic word Halloween, that I whispered to Riya. Yes, Riya was so excited and dressed up like Witch with face makeup and she did enjoy thoroughly the Halloween Celebration in her School. It’s Halloween time here which is usually celebrated on 31st of October. During this season one can see lot of Pumpkins  in the shops with different shapes and sizes. I believe, Pumpkins here is mostly used for making jack-o’-lanterns (Pumpkin lamp which is carved like a scary face) more than it’s consumption.

When I supposed to send a Halloween party food to KG, immediately I thought of Marshmallow and making dress like Ghosts. For the Ghosts body I don’t want to go for cupcakes, as children usually have it in almost all party’s. I wanted something which look like a cone and tastes yum. I found this Coconut Macroon recipe here and it turned out very well. To make up this 50 ghosts it didn’t take much time, and to makeup my witch it took a little longer but we were on time.  When I asked Riya to taste one of those,  she picked up white one and said in real ghosts look like white, so I will take white. She did like it and asked for more with one pink and one blue.

Here is the Recipe….

Ingredients for Coconut Macroon

  1. Dessicated coconut – 500 gms
  2. Large Egg whites  of 6 Eggs
  3. Sugar – 400 gms
  4. Vanilla sugar – 25 gms

Ingredients for the Marshmallow ghost dress:

  1. Marshmallow – 300 gms
  2. Water – 2 Tbs
  3. Food color – a little
  4. Powder sugar – 200 gms
  5. Chocolate bar – 50 gms ( for Ghosts eye and mouth coloring)

Method for Coconut Macroon’s:

1. Add egg whites and sugar in a bowl and bring it to medium heat. Whisk it for approx 10 – 15 minutes until the mixture becomes frothy.

2. Add vanila Sugar or any flavour and add coconut. Stir it for 5 minutes in a slow heat.

3. Now shape this into cones with hand and place it in a baking tray.

4. Preheat the Oven and bake it for 10 minutes at 170 C (or) till the cones become golden brown color. ( You can feel the fragrence, when it is done).

5. After 10 minutes, switch of the oven and let the oven door half  open and let the coconut macroons sit in oven for another 10 minutes.

6. Let the macroons cool and arrange it in a plate for decoration.

Method for Marshmallow dress:

  1. Add  Marshmallow and 2 Tbs of water in a bowl and microwave it for 1 minute in high, mixing it for couple of times in between.
  2. Remove it and food color and mix it with a spatula.
  3. Now add powdered sugar generously and mix it with hand. (It is too sticky, you can use some margarine or shortening to help it in mixing)
  4. Knead it till it becomes a smooth dough.
  5. Roll the dough in to thin sheet using rolling pin and cut in to small circles using cookie cutter.
  6. Just put this small circles on top of macroons and slowly drag it to all the sides. ( I wanted the Coconut Macroons to be seen below dress.)
  7. Melt the chocolate in double boiling method and using a small stick apply dots for eyes and mouth and your Halloween Ghost is ready.

Butter Jam Cookies (Mothers Day Special)

Happy Mother’s Day

Wishing All of you a Happy Mother’s Day!!!!!

I was really happy to get the above surprise present and song from my daughter this morning. Though i knew that she had something hiding in her room on Friday evening after her school,to surprise me on Mother’s day. I pretended that i don’t know anything about what she is doing. She made a Heartin Bag full of puzzles, which says I LOVE LIEBE (dear)  MAMA and greeting card in the school with the help of her teacher. I too wanted to surprise her and made some cookies, which she liked very much. Well!! I called my mom and wished her too.

Ingredients:

  1. All purpose flour – 2 cups
  2. Butter- 100 gm, in room temperature
  3. Sugar – 50 gms
  4. Salt a pinch
  5. Rock Sugar – 1/4 cup for decoration
  6. Jam – 1/4 Cup for decoration
  7. Coconut – 2 Tsp , desicated

Method:

1. Mix all purpose flour, Butter, sugar and salt. Sprinkle few drops of water and make a tight dough. Leave it for 15 minutes to rest.

2. Knead the dough and roll it with a rolling pin. Using cookie cutter of similar shapes a big one and small to cut the rolled out dough in to shapes.

3. Arrange the shapes one on top of another as in the following picture, so as to make it shallow in the middle to fill jam and sprinkle a little desicated coconut. On the edges sprinkle some Rock sugar.

4. Preheat the oven to 200 c and bake it for 5 – 7 minutes. After it is done replace the cookies in serving plate and add little more jam and coconut on top to give a fresh look.
