Carrot Ginger Soup

Ingredients:

  1. Olive oil – 1 Tsp
  2. Onion – 1/2, roughly chopped
  3. Ginger – 1cm cube, finely chopped
  4. Carrot – 2 medium-sized, roughly chopped
  5. Fresh cream – 1 Tsp (Optional)
  6. Salt for taste

Method:

1. Add oil in a cooking vessel.  Saute the onions & ginger for 2 minutes.

2. Add Carrot and saute for 2 minutes.

3. Add 1 cup of water and cover it cook till the carrots are soft.

4. Puree this in a mixer to a fine thick consistency and transfer it to the soup bowl.

5. Add a dash of cream to the soup.

Tip: Carrot soup as itself was good without cream. It can be also garnished with coriander leaves.
